Susan Lemieux-Cortez has always been interested in piracy and related folklore, and with a long history of working in the family restaurant, she found the idea of a pirate-themed cookbook irresistible. Susan had her first taste of rum cake while living in Grand Cayman, but at the time there were only two companies making the heavenly treats, and there were limited choices: original, chocolate, coconut, and banana. Seeking a little more variety, she began to experiment, and before long, she had 41 recipes. Rum cakes had been taken to an entirely new level, and the idea for a rum cake cookbook was born.

In the early days, Susan made her rum cakes from scratch, but eventually she began experimenting with different flavors of prepackaged cake mixes, tripling her repertoire of gourmet cakes.

“Of course, now and then when my days are not so hectic, I still enjoy baking from scratch and I whip out the old recipes. However, let’s face it, those days are far and few between, especially now, since I have become a full-fledged member of Blackbeard’s Crew. Oh, I do love my kitchen, but being a Pyrate is my first love…”

About the Author: Susan Lemieux-Cortez was raised in the family restaurant business and has been cooking since she was ten years old. Growing up in Rhode Island instilled a love of the ocean and marine life, which led to her studies of marine biology, primarily the migration path of humpback whales.
