According to the CDC, approximately 400-500 food-borne outbreaks are investigated by local and state health departments yearly. Codes, regulations, and guidelines have been established for implementation in the Food Service Operation Departments of long-term care facilities and nursing homes. “Food Safety in Long-Term Care” presents those codes and regulations in an easy-to-understand online format and guides students through the process of implementing institutional plans to identify, monitor, and control pathogens that may cause food-borne illness. Procedures that help ensure the safety of food from the time it enters a facility until it is distributed to residents are outlined. In addition, the Hazard Analysis Critical Control Point (HACCP) system is explained and its principles are illustrated.
