Today Mexican tacos typically start with soft, freshly made corn tortillas while the popular American taco is fried and crispy. It may be hot outside and turning on the oven may not be a cook’s first choice. But consider doing a roast overnight on Thursday (at low temperature) for a whole weekend’s worth of meals. And, of course, have the red wines available to spice up each menu.
