Essensia Restaurant & Lounge at the Palms Hotel & Spa Introduces Summer Menus with Light, Pure and Bursting Flavors

Miami Beach, FL, August 18, 2010 --(PR.com)-- Essensia Restaurant & Lounge at The Palms Hotel & Spa introduces their latest seasonal menu with the very best ingredients the season has to offer. Featuring several new menu items for the summer and revamping existing favorites with light, distinctive summer twists, the new menu continues to exemplify Essensia’s natural gourmet concept by embodying wholesome, fresh and tasteful cuisine.

Created by highly accomplished Executive Chef Frank Jeannetti and his team, the new menus at Essensia, and throughout the hotel’s food and beverage outlets, emphasize flavor and simplicity by blending local, seasonal, and organic ingredients from local purveyors wherever possible to create what has been coined as “the pure essence of taste.”

“People tend to eat lighter in the summer, so I’ve taken the freshest ingredients I could source locally and have paired them with the highest quality natural meats and sustainable fish to create a menu that is light, pure and bursting with flavor,” says Chef Jeannetti. “My team and I strive to create inventive, beautiful dishes where the purest of ingredients shine and work together without heavy or overpowering sauces and spices.”

The updates include a selection of new seafood and fish offerings and lighter dishes for warmer weather. Light vegetable purees and fruity salsas will accompany the fish, meat or poultry in each dish. New items to be featured include Miso Glazed Wild North Atlantic Black Cod With Celery Root Puree And Shaved Organic Radish Salad, and Pistachio Crusted Domestic Rack Of Lamb With Cauliflower Puree, Petit Summer Vegetables And Plum Wine Huckleberry Sauce. Other popular dishes such as the Angus Beef Short Ribs and the Maine Diver Scallops will remain on the summer menu with a fresh interpretation to their preparation.

The new menu will also feature unique, homemade pastas with organic ingredients and almost an entire new assortment of healthy and colorful salads and appetizers including Essensia’s Organic Orchid Petal Salad and Grilled Giant Prawns with Mango Rice. Pastry Chef Gail Goetsch will also be incorporating her own special touch with an array of exquisite and inventive desserts such as a Rustic Apricot Tart with Spiced Almonds and Ginger Almond Ice-cream as well as a Raspberry Lavender-Honey Napoleon with Candied Lemon Sorbet and Mint Syrup.

Essensia’s Sunday Brunch will continue throughout the summer offering patrons a beautifully presented selection of traditional brunch specialties, including hot and cold breakfast items, a salad station and unique highlights such as an outdoor grill, and risotto and pasta station. Chef Jeannetti has made a few spins on conventional brunch items to showcase the restaurant’s healthful mission by including only organic eggs at the omelette station, fresh Belgian waffles and bountiful sweet fruits and berries.
