Cellar Notes: the grapes are picked by hand; the wine is then matured in stainless steel for three months. Subsequent oak aging adds complex burnt earthy notes, making this a particularly well-finished wine.

Appearance: an appealing ruby colour with a deep mauve rim.

Aromas: light oak on the nose: vanilla and incense mingling with nutmeg and liquorice; burnt caramel and ripe, jammy black fruit (plums, dates, figs and wild strawberries).

Palate: A good fleshy attack on the full and well-rounded palate. This is a rich wine with a particularly well-balanced structure: fruity and finely oaked but also rich and mature. Medium bodied with a refreshing balancing acidity.

Serving suggestions: has the weight to go perfectly with roast lamb, the fruit to go with the dates, figs and lemons of rich tagines, and the gorgeous oak treatment to complement spicy spatchcocked birds with harissa and ras el hanout.

Vineyard Notes: Bonassia
The Bonassia estate is in the Beni M'Tir appellation in the foothills of the Atlas mountains, near Meknes and 130km from the sea. The wine is 70% Cabernet Sauvignon and 30% Merlot and is impressively round and smooth, with a lovely warming and spicy use of oak.
