To create his array of new appetizers and entrees, Chef Dudley draws on his West Coast roots for his popular American California Continental-style masterpieces with French, Italian, and Japanese influences and a strong emphasis featuring “fresh vegetables” as the centerpiece of his culinary designs rather than solely showcasing the protein as traditionally done. He does this by transforming a diverse selection of ordinary vegetables (sometimes a total of six per plate) into blissfully memorable treats, with each item prepared and paired as a bold, flavorful compliment to each other.
Appetizers, ranging in price from $7 to $17, include Eggplant and Goat Cheese Ravioli, Jumbo Lump Crab Cake with Whole Grain Mustard Buerre Blanc and Mico Greens, and Bacon Wrapped Sea Scallops with Celery Root and Apple Puree. Entrees, ranging in price from $24 to $45, include Mustard Crusted Fillet of Salmon with Asparagus Raft and Tomato Basil Fondue, Roast Chicken Breast Provencal with Basil Polenta and Glazed Carrots, Grilled Minted Lamb Chops with Sweet Pea and Mint Risotto, Harris Ranch Certified Filet Mignon with Truffle Butter, and Lobster & Crab Stuffed Shrimp with Angel Hair Pasta, San Marzano Tomatoes, and Fresh Basil. A Prix Fixe menu offers choice of three appetizers, three entrees, chef’s daily dessert selection, and coffee for $38.95 plus tax and gratuity.
