Taco Pasta Salad
1 pkg Namaste "Taco Shells" Pasta
1 - 15oz can kidney beans, drained
1 red or green pepper, chopped
1 cup frozen corn, thawed
1 fresh tomato, diced
2 green onions, chopped
1/4 bunch fresh cilantro or parsley, chopped
1 Taco Shells seasoning packet
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup lime juice
salt and pepper to taste
1. Set aside Taco Shells seasoning packet. Cook the pasta in boiling salted water until done, about 7 - 10 minutes, stirring occasionally. Drain and rinse briefly in cold water to stop the cooking process.
2. Place pasta in large bowl and toss in seasoning packet, kidney beans, peppers, corn, tomato, green onions and parsley or cilantro. In separate bowl, stir together sour cream, mayonnaise, and lime juice, then combine with pasta. Mix well. Refrigerate for a few hours or overnight. Season with salt and pepper to taste. Serve cold..
