TraceGains and AIB International e-Book Highlights Preventing Incorrect Ingredient Statements
Westminster, CO, October 17, 2014 --(PR.com)-- TraceGains, a full service supplier, compliance, and regulatory document management solution, and Stephanie Lopez, Vice President of Food Safety Services Innovation at AIB International have co-produced an e-Book addressing food manufacturers best practices for allergen control programs.
One recommended best practice is for food manufacturers to create a transparency with the correct ingredient statement to confirm ingredient statements on packaging for finished products and raw material upon receipt. Lopez explained, “If you are exporting a product outside of the United States that requires packaging in a language other than English, the pre-printed acetate will allow you to confirm that the specifications and packaging have the same declaration, even if you are not familiar with that language.”
Allergen control programs are multifaceted with elements ranging from ingredient supplier verification, storage, scheduling, formula and rework control, sanitation and changeover, and label verification. Several best practices are discussed in the e-Book. Lopez shared, “It’s exciting when we find new ways to share best practices with the industry.”
Lopez began her career in the food industry in 1993. Over the years, she has led Quality, Sanitation, and Product Development departments for various international food companies. At AIB, she has held roles of Food Safety Auditor, HACCP Coordinator, Director of Food Safety Education, Vice President of Food Safety Education and currently, Vice President of Food Safety Services Innovation.
AIB International is a corporation founded by the North American wholesale and retail baking industries in 1919 as a technology transfer center for bakers and food processors. The original mission of the organization was to "put science to work for the baker," and that basic theme is still central to all of the programs, products, and services provided by AIB to baking and general food production industries worldwide.
