Downtown Kalamazoo’s Principle Food and Drink Introduces Premium Michigan Beef to Diners with a 5 Course Tasting Menu
Featured tasting menu at downtown Kalamazoo’s Principle Food and Drink debuts 120 year old family farm’s premium Michigan beef and Lamb. 5 course tasting Menu Includes a Cortado Short Rib with Cherry Rhubarb BBQ.
Kalamazoo, MI, June 30, 2017 --(PR.com)-- When you think of premium beef, Michigan is not the first place that comes to mind, but last weekend Oswalt Family Farms began to change that. The Oswalt Family has been raising award-winning cattle In Vicksburg for over 100 years. Founded in 1893, Oswalt Family Farms has been in operation for over 6 generations. Last weekend a featured tasting menu at downtown Kalamazoo’s Principle Food and Drink was the first opportunity for local consumers to try Oswalt’s premium Michigan beef.
“The opportunity to introduce a local farm to our customers and have them understand where the food they are eating comes from is exciting for us,” says Principle Co-Founder Casey Longton.
Together executive chef Matt Pietsch from Salt Of The Earth and Principle Chef de Cuisine Paul Parrish crafted a menu focusing on Oswalt’s locally raised beef. Taking a few playful cues from the theme of a summer BBQ. The tasting menu served 80 diners 3 new interpretations of classic grilled and smoked meats from Oswalt Family Farms. Including 18 hour acid marinated brisket and a cortado short rib with cherry and rhubarb.
